Abstract
Introduction
The growth in the consumption of ultra-processed foods has been widely associated with negative health outcomes. Developed in Brazil, the term ultra-processed foods and the Nova food classification system have become key references for understanding the contemporary nutritional transition. In the country, it is estimated that 28.6% of the increase in obesity prevalence between 2002 and 2009 is associated with the increased consumption of these products. In this context, the Dietary Guidelines for the Brazilian Population incorporated the degree of food processing into their recommendations, synthesised in the “golden rule” of prioritising fresh or minimally processed foods. As part of its implementation agenda within the Brazilian Unified Health System, the Ministry of Health published the Protocols based on the Dietary Guidelines for individual dietary advice across the life course.
